Homemade Halloween Granola (Taken with instagram)
2 1/2 cups whole rolled oats
1/2 cup brown sugar
1/2 cup nuts (almonds used here; you can smash them up a bit but I like them whole)
1/4 cup pumpkin seeds, raw
1/4 cup honey
1 teaspoon Penzeys cake spice (or substitute cinnamon)
1 teaspoon vanilla
1/3 cup butter, melted
Preheat the oven to 325°F. In a large bowl, mix the oats with the brown sugar, nuts, seeds, honey & spice. Stir the vanilla into the butter & pour over the oat mixture. Mix well with a spatula.
Line a half-sheet baking pan with a silpat baking mat or parchment paper. (It’s a little more clean-up but alternately you can spray a pan with cooking spray). Spread the mixture on the pan. Bake 18-22 minutes, stirring occasionally, until lightly golden brown. Let the granola cool, and store in an air-tight container.
My Halloween/Autumn breakfast: I sprinkled a small handful of the still-warm granola over 2% Greek yogurt & 2 teaspoons of Trader Joe’s pumpkin butter.
